Ingredients:
- 1/4 cup uncooked quinoa
- 1/4 cup dried green lentils
- 1-1/2 cups water
- 1/3 cup finely chopped walnuts
- 1/2 cup fresh whole wheat bread crumbs
- 1 (15-ounce) can chickpeas, rinsed, drained, lightly mashed
- 3/4 cup finely chopped celery
- 3/4 cup finely chopped onion
- 1 cup finely chopped red (or green) bell pepper
- ground black pepper and garlic powder to taste
Directions:
- In a small saucepan over high heat, combine quinoa, lentils, and water.
- Bring to a boil, cover pan, reduce heat to low and simmer for 20 minutes or until lentils are tender. Remove from heat and set aside to cool.
- Preheat oven to 350 degrees F. Spray a baking sheet with cooking spray.
- In a large bowl, combine walnuts, bread crumbs, chickpeas, celery, onion, bell pepper, and lentil/quinoa mixture. Season with salt and pepper.
- Use your hands to mix ingredients and form 7 patties.
- Place patties on the prepared baking sheet (using 1/2 cup of mixture at a time) and bake for 20 minutes. Serve immediately with your choice of bun and toppings.
